Beef, snake bean and fresh rice noodle stir-fry
INGREDIENT
- Beef Fillet, Thinly Sliced into Strips
- Light Soy Sauce, 1 Tablespoon
- Caster Sugar, 1 Tablespoon
- Sesame Oil, 1 Teaspoon
- Garlic, 1 Clove, Crushe
- Oil, 1 Tablespoon
- Garlic Chives, 1 Bunch, Cut into 3cm Lengths
- Chilli Bean Paste, 1 Tablespoon
- Fresh Rice Noodles, Separated, Cut into 4cm Lengths, Blanched (See Tip)
- Long Red Chilli, 1, Finely Sliced
METHOD
1. In a bowl, combine beef, soy, sugar, oil and garlic. Cover and chill 30 minutes.
2. Heat oil in a large wok on high. Drain beef, reserving marinade. Stir-fry beef 2-3 minutes, until well browned. Add beans, garlic chives, chilli bean paste and reserved marinade.
3. Stir-fry 1-2 minutes, until sauce is boiling. Gently toss noodles through beef mixture or serve on the side. Serve sprinkled with chilli.
TOP TIP
To blanch fresh noodles (to separate and warm them) simply place in a colander and submerge in boiling water 1-2 minutes.
