Tamil Nadu food menu has a wide range of vegetarian and non-vegetarian delicacies to offer. The food here gets its flavor from a host of spices and condiments used in Tamil Nadu. This cuisine is hot and spicy and provides delectable variety in mutton, chicken and fish dishes. Chettinad Pepper Chicken is one of the most famous Tamil Nadu dishes. The Tamil style of Mughali food can be tasted in the Biriyanis and Paya. Paya is a type of spiced trotter’s broth and is eaten with either Parathas or Appam.

Tamil Nadu, especially Chennai, is famous for its filter coffee. Most Tamils have a subtle disliking for instant coffee; therefore filter coffee is more popular. The preparation of filter coffee is almost like a daily chore, the coffee beans have to be first roasted and then ground. The coffee powder is then put into a filter set and hot boiled water is added to prepare the boiling and allowed to set for about 15 minutes. The decoction is then added to milk with sugar to taste. The drink thus prepared is then poured from one container to another in rapid succession to make the perfect frothy cup of filter coffee. An exotic drink that refreshes you and the taste that lingers.

Delectable Tamil Cuisines


In Tamil Nadu cuisine, breakfast or tiffin includes idly, dosai (a pancake made from a batter of rice) and lentils crisp fried on a pan, vada(deep fried doughnuts made from a batter of lentils), pongal, uppuma. Most of the dishes in Tamil Nadu are eaten with coconut chutney, sambar.
The Tamil Lunch or meals consists of cooked rice served with different kinds of vegetable dishes, Sambar, chutneys, Rasam (a hot broth made with tamarind juice and pepper) and curd(yogurt). The non-vegetarian lunch includes curries or dishes cooked with mutton, chicken or fish. Tamil meals are incomplete without crisp Papads or Appalam.

Vegan Rice Salad - The Recipe



This is One of Those Quickie Type of Salad

Its summer and too hot to schlep into the kitchen for too long. So you scoot around your organic vegetable patch and pluck the greens, that is if you are that organised! I am not, so I have to get my greens from reliable green crocer who does stock good qualty organic vegetables at a reasonable price.

Unlike those supermarkets, who assume because it is a green product:-

That we the purchasers are green
That they can add green to their prices
that they sneak in some items of dubious origin and place them in the organics section.
My pet objection to supermarkets, is showing today.

Slap this with some of the cold left over rice, probably the rice you were going to make a fried rice dish. Heres the twist, skip the Mayo, use Olive Oil, you will be amazed at the difference in taste.

An Ideal Summer Salad
Rice Salad

Ingredients

  • 2 - 3 cups of cold cooked organic rice
  • 1 tablespoon of desiccated coconut
  •  4 teaspoons of sesame seeds
  •  125g of brown mushrooms
  •  ½ a butter or any other lettuce
  •  ½ a cos lettuce 
  • 4 -6 cherry tomatoes
  •  2 sprigs of spring onions 
  • 1 - 2 stalks of celery 
  • Virgin Olive Oil or for dressing 
  • Non Oidated Sea Salt 
  • Pepper


Method

  •    Wash and trim all of the salad ingredients.
  •  Slice the mushrooms, spring onions, tomatoes and the celery. Chop or shred the leafy    vegetables.
  •  Combine the coconut and sesame seeds with the cold rice.
  •  Add the salad ingredients to the rice. Add a generous sprinkling of olive oil , a good pinch or two of salt and then give the salad a final stir.
  •  Serve well chilled, on its own or as a part of a super salad buffet.

CHINESE FRIED RICE RECIPE


Fried rice is a popular entree at Chinese and other Asian restaurants. A typical 1 cup serving of plain fried rice provides about 56 percent of its calories as carbohydrates, 33 percent as fat and 11 percent as protein. Adding meat to the fried rice increases both its protein and fat levels. You can control the amount of fat, calories and sodium in your fried rice by learning to make this simple dish at home.

Ingredients for easy fried rice:

  • 2 cups Rice
  • 3 tbsp Oil
  • 100 gms Beans Finely Chopped
  • 2 Carrot Finely Chopped
  • 1 Onion Sliced
  • 100 gms Cabbage Finely Chopped
  • 2 Spring Onions Finely Chopped
  • 2-3 Green Chilies cut lenghtwise
  • 1 tsp Ginger Chopped Finely
  • 1 tsp Garlic Finely Chopped
  • 2 tbsp Soya Sauce
  • Salt & pepper to taste


How to make chinese fried rice:
  • Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
  • Boil water, add rice and little salt.
  • Cook uncovered on low heat till rice is tender.
  • Take care not to overcook the rice. Each grain of rice should be separate.
  • When rice is done, drain and add soom cold water and drain again using a large seive and set aside.
  • Heat oil in a kadhai / large pan and stir fry all the chopped vegetables.
  • Cook for 3-4 minutes.
  • Take care that vegetables are not overdone, they should be crisp.
  • Mix salt and pepper to taste.
  • Add the cooked rice and mix well. Now mix the soya sauce to it.
  • Cook the chinese fried rice for 2-3 minutes and serve hot.

SAMBAR RECIPE


Being from South of India, Sambar is almost a staple for us at home. Though in Andhra sambhar is not supposed to be a native dish. Yet these days it's quite common to hear it being prepared frequently. But when you talk about Tamil Nadu and the way Sambar is made, well it's inevitable that there are many ways to make this simple dish.

Even though I make Sambar almost twice or thrice at times a week, I was still tempted to learn the way this sambar was made by my colleague's mom. They hail from Tirunelveli, and this is the way they make their sambar. I am sure even this might vary from other families from the same city. Tirunelveli is famous for its Tirunelveli Halwa. I was happy knowing another delicacy from the place.

When I finally made it at home, I did forget some and by practice added some. Like my friend said they normally don't add tomatoes. But then I got it confirmed from her mom that tomato can be added. Well it's all what's available at hand finally I guess. Still this had lots of different steps involved. It tasted great with steaming Rice. I took this for my lunch and had fun.

  • 2 cup Sambhar (Tuvar) Dal
  • 1/4 kg Vegetables( Drumstick,Green Pepper,Eggplant,Okra)
  • 1/4 tsp Fenugreek seeds
  • 3 Red chillies
  • 3 Green chillies
  • 1 tsp Sambhar powder
  • Curry leaves
  • a pinch Hing
  • 1 tsp Salt
  • 2 tsp Mustard
  • 1/4 tsp Tamarind paste
  • 4 tbsp Cooking oil


How to make sambar:

  • Wash and dice all the vegetables.
  • Boil water and cook the dal with turmeric and salt.
  • Separate the cooked dal and water, and keep them aside.
  • In thuvar dal water cook the vegetables..
  • After the veggies are cooked, add tamarind paste.
  • Now add the cooked thuvar dal and simmer for a few more minutes
  • Heat some oil in a pan, splutter mustard, then add methi, red chillies, green chillies, 
  • curry leaves, hing, turmeric, and sambhar powder and keep frying for a few minutes.
  • Season the sambhar with the above prepared tadka.

Mushrooms with Seared Salmon

  • Combine balsamic and sugar in a small saucepan. Stir over medium heat until sugar dissolves. Simmer for 3 minutes until mixture has thickened slightly. Set aside to cool.
  • Cut each piece of salmon in half, lengthways. Combine ginger, chilli and olive oil in a ceramic dish. Add salmon, season with salt and pepper and turn to coat. Cover and Refrigerate for 5 minutes.
  • Preheat barbecue on medium-high heat. Barbecue the salmon for 1 minutes each side or until cooked to your liking. Transfer to a tray, keep warm.
  • Increase heat to high, add mushrooms, drizzle with a little balsamic mixture and cook for 2-3 minutes each side until tender.
  • Arrange rocket on serving plate. Top with two slices of salmon then mushrooms, drizzle with a little more balsamic mixture and serve.

Before tying on the apron, however, take note of the 10 tips we've put together to help aspiring chefs produce perfect cupcakes.

Ingredients
  • 2 cups all purpose flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 egg whites from large eggs
  • 1/2 cup shortening
  • 1 cup 2% milk
  • 2 large eggs
  • 1 1/2 teaspoon vanilla


 Vanilla Cupcake Recipe Directions

  • Preheat oven to 350 degrees.  Line cupcake pans with paper liners.
  • Combine flour, sugar, baking powder, salt, shortening, milk and vanilla  in a large mixing bowl.  Mix at low speed for 2 minutes.  Scrape bowl.  Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes.
  • Fill liners 1/2 to 2/3 full of batter.  Do not overfill.  Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
  • Frost and decorate your vanilla cupcakes as desired.
